Dough and Bakery Production Staff job description
Dough and Bakery Production Staff mix, scale, shape, prove and bake products in a food bakery unit. They work through the night so fresh bread and biscuits reach outlets on time.

Why the role exists
This team works in a bakery or biscuit unit under the production supervisor or head baker. Their work follows the oven schedule: mixing, resting, shaping, proving, baking and cooling, so fresh goods are ready for dispatch before the morning rush.
What the person does
- Scale flour, yeast, sugar, fat and improvers by weight as the recipe sheet states.
- Operate the dough mixer, checking mixing time, dough temperature and consistency.
- Divide, round and shape dough for bread, buns, rusk or biscuits using dividers, moulders or by hand.
- Load trays into the proving cabinet and watch time and humidity until the dough is ready to bake.
- Load and unload the oven, set bake time and temperature and check colour and crust.
- Cool, slice and pack finished goods and hand them to dispatch within the set time.
- Clean mixers, trays, tables and floors, and keep flour dust under control.
- Count raw material use, spoilt dough and rejects and report them to the supervisor each shift.
Skills and tools
- Dough mixing, resting, proving and baking stages
- Scaling ingredients accurately with scales and measures
- Operating dividers, moulders, sheeters and deck or rotary ovens
- Judging dough texture, rise and crust colour
- Hygiene in a flour environment, including pest and dust control
- Safe handling of hot trays and moving machinery

Education and experience
Preferred, never a bar: equivalent experience counts.
- Certificate in baking or food production preferred, or equivalent bakery experience.
- Previous work in a bakery, biscuit or bread unit is preferred.
- Food handling and machine safety training as the employer requires; confirm what applies with your own adviser.
- Readiness for night and early morning shifts and for standing, lifting and heat.
How the work is judged
- Batches ready for dispatch at the agreed time
- Consistency of weight, size, texture and colour across batches
- Dough and baked goods lost to rejects or spoilage
- Cleanliness of mixing, proving and baking areas
- Attendance and punctuality across early and night shifts
Where the role can lead
- Senior baker or oven in-charge on the production floor.
- Production supervisor for the bakery floor.
- Quality or product development assistant in a bakery or biscuit company.
Interview questions to ask
Ask every candidate the same questions in the same order and score them against written anchors, so the decision rests on the work and not the impression.
- How do you tell when dough is properly mixed or proved without looking at the clock?
- The oven runs hotter than the setting and buns are browning too fast. What do you do?
- Tell us how you scale ingredients so every batch has the same recipe.
- How do you handle a mixer breakdown with a full proving cabinet waiting?
- How do you keep flour dust and pests under control in a bakery?
- Describe a night shift problem you solved without waking the supervisor.
Hiring tips for this role
- Run a short working test: scale a recipe, mix, shape a few units and bake. Watch accuracy, cleanliness and respect for time.
- A common mistake is hiring for speed alone. Weight and recipe errors multiply quickly across large batches.
- Discuss night shifts and rest days before the offer. Bakeries lose staff early when timing was not made clear.
- Check safety habits around hot ovens, moving mixers and wet floors. Injuries on bakery floors cost both time and goodwill.
Questions about hiring a dough and bakery production staff
They scale ingredients, mix dough, shape and prove it, bake and cool products and pack them. They also clean the area and record what was used and what was wasted.
Not always. Many learn on the job. A certificate in baking helps, but a working test and earlier bakery experience usually show more about skill and reliability.
Hand washing, clean trays and mixers, flour dust control, pest control and correct storage of fat and dairy. Any licence or certificate needed depends on your unit, state and facts, so confirm it with your own adviser.
